Stuffed Mushrooms

This is a wonderful appetizer which is not difficult to prepare. It tastes magic!

Stuffed MushroomsIngredients:

8-10 big mushrooms
20 g butter
30 g katuk / yoghurt from sheep’s milk/
10-15 olives
150 g yellow cheese

Method:

Remove stems from mushrooms. Wash the caps and place them in a greased baking tin. Bake at 200 C. Chop the olives and combine with the katuk. When the mushrooms are ready, fill them with the mixture and top with grated yellow cheese. Put in the oven until the yellow cheese is soft.

Pirojki (pies with filling)

This is fast and easy!

Ingredients:

2 cans of goose liver pate spread
Chopped broccoli
2 carrots shredded
2 onions
vegetable oil
Ready-made dough
1 egg

Method:

Cut the onion into rounds and then into half. Mix with the carrots and sauté. Add broccoli and mix with the spread. Roll out sheets of dough. They should be thicker than filo pastry. Cut the sheets into quadrangles. Place a spoonful of filling on each quadrangle and lift the edges towards the center and press to seal. Grease a baking tin and place the pockets in it. Brush them with beaten yolk. Bake in a preheated oven at 200 degrees C for 18-20 min.

Traditional Bulgarian Mousaka

I offer you a traditional Bulgarian dish!

Traditional Bulgarian MousakaIngredients:

½ kg minced meat
½ kg potatoes
1/3 jar/can/ of tomatoes
2 onions finely chopped
1 jar of yoghurt
2 eggs
2 tbsp flour
Salt, vegetable oil, savory
A pinch of powdered black pepper
A pinch of sugar

Method:

Put the onion into a deep pan with some water over heat to take away the smell. Cut the potatoes into small pieces. Stir the onion and when the water evaporates, pour in ½ cup of oil. Add potatoes and stir them until they soften. Add minced meat and sauté. Bring ½ l water to the boil . Stir mashed tomatoes/ or freshly grated/ in the mixture. Season with sugar, salt and black pepper. Stir the mixture while cooking over low heat. Before removing from heat add savory. Pour the mixture into a baking tin, pour in hot water and bake in preheated oven at 200 degrees C.

Cooking the Sauce:

Put 2 tbsp flour in a saucepan over medium heat and stir until it is golden. Remove it and allow it to cool down. Whisk 2 eggs and some yoghurt. Stir in the flour. Add a pinch of salt. When the potatoes are cooked, spread the sauce over the mousaka and spoon well. Before that ,if necessary ,add some hot water to the baking tin. Bake until golden brown. You may serve it with some yoghurt.

Yoghurt dessert

This is a fast and easy dessert !

Yoghurt dessert
Ingredients:

2 jars of yoghurt
4 big/ 12 small/ biscotti
6 tbsp powdered sugar
Cherries or strawberries (canned)
2 kiwis
Raisins
½ cup of ground walnuts

Method:

Mix yoghurt with the sugar. In glass dessert bowls put bits of biscotti- 1 big one or 3 small ones to each bowl. Add some raisins and walnuts. Pour in the yoghurt. Garnish with some cherries/strawberries/. You can add a teaspoonful of jam if you wish. This is a real treat for both children and adults.

Custard

This is a classic recipe which is tasty and much loved !

CustardIngredients:

1 l milk
6 eggs
1 cup of sugar
1 vanilla

Method:

Whisk the eggs and sugar. Stir in milk and vanilla. Melt some sugar in custard cups or a baking tin – a teaspoonful of sugar to each cup. Pour the egg-and-milk mixture in the cups over the caramelized sugar. Place the cups in a pan with some water and bake in the oven. Be careful not to bring the mixture to the boil. Therefore add some cold water to the pan if necessary. If the mixture is brought to the boil, the custard will be riddled. Serve cold in a dessert plate. You may garnish it with vanilla ice-cream.
