Tripe broth

One dish embodying the nation (or at least part of it) !


Ingredients:

1-2 kg tripe / beef or pork /;
1 onion;
2 eggs;
1 tea cup of yogurt;
2 spoons flour;
garlic;
vinegar

Method:

Washed and cleaned the tripe is well-boiled till begin to tear.
Skim while it is boiled and when it is ready cut into pieces and take back to the broth, which it was boiling.
In another vessel fry the onion in 1 cup of coffee oil and when mellow red pepper is added. Add to the tripe. Make a liaison - 1 tea cup of yogurt, 2 yolk, 2 spoons of flour to stir up well on a little hot plate. It is boiled continuously stirring until thickening. The mixture is diluted with a part of the broth and is mixed in a pan with the tripe. Sprinkled with pepper.
separately bray garlic, pour on with vinegar - to become a thick mash. Having served he broth, separately put the cup with garlic to supplement optional. Who loves hot, you can grind dried hot peppers. It is consumed hot.

Pumpkin with cream caramel

A really sweet recipe !


Pumpkin with cream caramelIngredients:

a pumpkin around 2 kg, preferably type violin;
one litre of fresh milk;
6 eggs;
300 grams sugar

Method:

Peel and seed the pumpkin. Cut in slices and arrange in the baking dish. Pour on with water to cover half the pumpkin pieces, then powder with some of sugar - 200 grams. Bake in the oven to 250 degrees to brown, the water must boil away. The pumpkin should be moist, but without water.
For the mixture: beat the eggs with sugar - 100 grams. Slowly add small portions of milk stirring the mixture.
Pour on the pumpkin with pre-prepared mixture of milk, eggs and the sugar and leave it in the oven till the thickening and redness of the mixture.

Crispy chicken wings

A non-conventional recipe for chicken wings !

Crispy chicken wingletsIngredients:

Chicken wings
Yoghurt
Salt
Thyme
Savory
Water

Method:

Allow wings to rest in yoghurt and salt to taste for 2-3 hours. Place the wings on the oven grid and put a baking tin of water and spices below it so that the wings can absorb well the flavour of the spices. Bake at 200 degrees C. You can leave the oven longer to make them crispier.

Salad of large dried peppers in "kapanski"

Method:

Boil 15-20 dry big peppers for 10 min. Remove from the water and chop finely. Chop 2 medium-sized onions. Mix with the pepper and season with salt, vinegar and oil.

The ethnographic group of the Capantsi is found in northeastern Bulgaria – in the regions of Razgrad and Targovishte. They inhabit the villages of villages Dryanovets, Osenets, Sadina, Getsovo, Topchii, Krivnya, Kamenovo, Ushintsi, Zhelyazkovets, Dobroshkata - neighborhood of Razgrad, Opaka and others.

Gyuzlemi

An old country recipe, which my grandmother made regularly for breakfast - gyuzlemi:

You knead a soft dough. Roll out the pastry sheets - mean large, thin (maybe ready purchased). Separately stir mixture of eggs and cheese. Тhe eggs depends on the number of sheets. Each pastry sheet is rolled out and sprinkled with some oil. Sprinkle with the mixture. Fold the sheet as an envelope. When all of the sheets are folded, bake each of them using a "sach". The sach is a kind of kneading-trough. In the absence of "sach", you can fry them. Draws from both sides while become brown.
Be presented hot with tea or buttermilk.
