Tripe broth

One dish embodying the nation (or at least part of it) !


Ingredients:

1-2 kg tripe / beef or pork /;
1 onion;
2 eggs;
1 tea cup of yogurt;
2 spoons flour;
garlic;
vinegar

Method:

Washed and cleaned the tripe is well-boiled till begin to tear.
Skim while it is boiled and when it is ready cut into pieces and take back to the broth, which it was boiling.
In another vessel fry the onion in 1 cup of coffee oil and when mellow red pepper is added. Add to the tripe. Make a liaison - 1 tea cup of yogurt, 2 yolk, 2 spoons of flour to stir up well on a little hot plate. It is boiled continuously stirring until thickening. The mixture is diluted with a part of the broth and is mixed in a pan with the tripe. Sprinkled with pepper.
